Eggy Avocado Toast (vegan)

If you have no idea what the hell I’m talking about, read on to have your mind blown 🙂

Black salt or Kala Namak is a freaking miracle. It makes whatever you put it on taste EXACTLY like eggs because of its high sulfur content. 

When you open the container, the smell is actually kind of shocking!

We use this on our Easy Tofu Scramble to take it to the next level- SO GOOD!

This is an absolute favorite in our house because it is so freaking easy, healthy and our kids love it!

You can use gluten free toast or bagels if you have a gluten sensitivity or allergy. 

HOW DO YOU MAKE EGGY AVOCADO TOAST?

Grab a ripe avocado- oh shit, you missed the window, it’s over ripe already 🙁

Just kidding.

Cut it open, take out the pit, and scoop it into a bowl that you can mash it up in. Seriously, just grab a bigger bowl. You know how it turns out when you go for the small one and avocado ends up all over the gd counter!

Once mashed, throw in the black salt and pepper. Let it sit a minute so the salt dissolves. 

Meanwhile, toast your bread or bagel!

Spread the egg avocado mash on your toast. Top with sliced tomato and sprinkle with paprika.

Wolf it down it .5 seconds!

Ingredients

  • 1 ripe avocado
  • 1/2 tsp black salt
  • 1/2 tsp black pepper
  • Pinch paprika
  • 2 slices of bread or one bagel
  • 1 tomato, sliced

Instructions

  1. Cut open the avocado, scoop out the flesh and mash with a fork until desired consistency.
  2. Add the black salt and pepper. Mix and let it sit for about a minute to let the salt dissolve.
  3. Meanwhile, toast the bread or bagel.
  4. Spread the avocado mixture on your toast.
  5. Add the sliced tomato.
  6. Sprinkle with paprika and serve!

Notes

I really cannot stress how amazing black salt is. If you've been missing eggs, this will completely satisfy your craving!
