Vegan Cajun Po’Boy Sandwich

New Orleans Inspired Vegan Tofu Po’boy

Fried cornmeal crusted tofu loaded with cajun spices and topped with vegan mayo, pickled onions, hot peppers, lettuce, tomatoes on a french loaf.

Most vegan po’boy sandwiches are made with king oyster mushrooms that have been breaded and deep fried.

We decided to make ours with tofu for 2 reasons:

  1. Tofu fries up extraordinarily well and is easily seasoned.
  2. It’s what we had on hand!

This vegetarian po’boy is a nod to New Orleans cuisine– it’s a combination of all the different types of po’boys people eat by including hot sauce, mayo, pickles, lettuce, tomatoes and pickled onions.

With fried cornmeal crusted tofu that’s loaded with a mix of cajun seasoning and packed onto a fresh french loaf with all the fixin’s- this tofu po’boy recipe is next level good.

How Do You Make A Vegan Tofu Po’Boy?

Start by mixing all the seasonings in a bowl.

Break up the tofu into rough chunks by hand (any size will work) and toss them until covered in the seasoning mixture. Set aside.

Mix flour, cornmeal and a pinch of salt and pepper in a bowl.

In another bowl, whisk together non-dairy and lemon juice.

Dip each piece of the tofu into the milk briefly (so the seasoning doesn’t wash off) then drop into cornmeal/flour mixture and coat all sides. Tongs work really well for this.

Repeat for all the tofu and place on parchment paper until frying.

For shallow frying– heat vegetable oil till apprx. 300 degrees. Once oil is hot, place the tofu pieces in and cook for apprx. 7-10 minutes. Outsides should be crisp and golden brown.

For the air fryer– Place tofu pieces in the air fryer without the spinner (you probably won’t fit the whole batch in). Drizzle 3 tbsp of oil over all the pieces. Cook for apprx 20-25 minutes, flipping several times.

For the final sandwiches- spread mayo on the top half of a bun. Layer all your desired toppings, add tofu pieces. Close bun and serve with fries!

Ingredients

Tofu Seasonings

  • 2 tsp salt
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp onion powder
  • 1/2 tbsp nutritional yeast (optional)
  • 1 block firm or extra firm tofu (300-400 grams)

Breading

  • 1 cup non-dairy milk
  • 2 tbsp lemon juice (optional)
  • 1 cup all-purpose flour
  • 1 cup cornmeal

Sandwich

  • Long vegan buns (any bun will work)
  • Shredded lettuce
  • Sliced tomatoes
  • Sliced dill pickles
  • Pickled hot peppers
  • Pickled onions
  • Hot sauce
  • Vegan mayo

Notes

This is supposed to be a messy sandwich, the more toppings you can fit- the better!

The sandwich toppings are all optional- add or subtract whatever you want.
