Vegan Cuban Lunch

Vegan Cuban Lunch Chocolates are made with rich peanut butter chips, butterscotch chips, chocolate chips, salty peanuts and crushed plain chips. They’re unbelievably good!

Cuban Lunch. Have you ever had one? They are so addicting. The chips add an insanely delicious crunchy/salty level to the sweetness.

The problem is, they’re not anywhere near being vegan. And it is hard as hell to find/ make vegan butterscotch chips (have you tried melting vegan butter and brown sugar down together? It ain’t happening..)

Same with peanut butter chips! Most of them contain whey powder.

So we thought- that’s it. We’re doing it. We’re making VEGAN CUBAN LUNCHES, DAMMIT.

Here are the recipes to our easy DIY butterscotch and peanut butter chips:

I did find some vegan butterscotch chips if you’d prefer to spend the money and buy them! These ones aren’t too bad. 

HOW DO YOU MAKE A VEGAN CUBAN LUNCH?

Place all the chips (chocolate, peanut butter, butterscotch) into a double boiler to melt. I find this melts the chips evenly and doesn’t burn as easily.

Once they are melted, stir in the regular chips and peanuts. Make sure everything is evenly coated.

Use a spoon to scoop into paper cups or just onto parchment paper in desired size. Place in the fridge to harden or the freezer if you are desperate to have one.

We love making these for Christmas, holidays, birthdays, Easter… really, whatever excuse you can think of to make these- you’ll be making them!

Total Time 2 hours 15 minutes

Ingredients

  • 1 cup vegan peanut butter chips
  • 1 cup vegan butterscotch chips
  • 1 cup vegan chocolate chips
  • 3/4-1 cup crushed plain chips
  • 3/4-1 cup salted peanuts, whole

Instructions

  1. Melt all the peanut butter, butterscotch and chocolate chips in a double boiler over medium heat, stirring frequently.
  2. Pour into a mixing bowl and add the peanuts and crushed chips.
  3. Scoop into paper cups or onto parchment paper into desired size.

Notes

Using a double boiler seems to help melt the chocolate more evenly and lessens the chance of burning.

The amount of chips and peanuts is up to you! You may like more or less of those ingredients.
