Everything Mashed Potatoes make an excellent side OR main dish. They are jam packed full of veggies but taste just like mashed potatoes. A sneaky way to get your kids to eat some damn veggies- and beg for more!
As much as we LOVE comfort food and don’t eat healthy ALL the time- we do love some sneaky veggie dishes- especially when the kids are involved.
These everything mashed potatoes are made in less than 25 minutes and have carrots, cauliflower, peas and corn added.
You can have this as a side dish but in our fam it’s a main. Top it off with our Easy Vegan Gravy!
This makes a perfectly cosy fall/winter side or main dish for a chilly night. It’s pure comfort food with the added bonus of extra veggies so you won’t feel quite as bad when you over indulge.
HOW DO YOU MAKE EVERYTHING MASHED POTATOES?
Crank the heat up to high and boil the water. Once the water is boiling, add the potatoes, carrots and cauliflower. Reduce the heat to low, cover with a lid and boil for about 15 minutes. 20-25 minutes if you cut your potatoes into really big chunks.
Drain the water, add the vegan butter and milk- mash it up!
Add the frozen peas and corn, mix and serve with Easy Vegan Gravy.
- 6 medium potatoes, cubed
- 1/4 cauliflower, chopped
- 2 carrots, diced
- 1/4 cup vegan butter
- 1/4 cup non dairy milk
- Salt+pepper to taste
- 1/2 cup peas, fresh or frozen
- 1/2 cup corn, fresh or frozen
- Boil 8 cups of water.
- Once water is boiling, reduce heat to low, add potatoes, carrots and cauliflower, then cover with a lid.
- Boil on low until soft, about 15 minutes.
- Drain the water.
- Add the vegan butter and milk, mash till soft. Add corn and peas. Add salt+pepper to taste.
- Mix and serve with Easy Vegan Gravy!
